Funfetti Cookies

Last weekend Matt and I went to the Goo Goo Dolls and Matchbox 20 concert. One of my friends from college and her boyfriend drove down to go to the concert with us. We tailgated before the concert started and had an awesome time. (If you haven’t played Cards Against Humanity you should. We couldn’t stop laughing while playing it.) As part of the tailgate spread I wanted to make something sweet to go along with the turkey burgers and crab dip I made.


I found a few recipes on Pinterest for various desserts and asked Matt to make the final decision. The winning recipe was Birthday Cake Cookies from Bakerlady, or as I decided to call them, Funfetti Cookies. Because the recipe calls for dry pudding mix Matt absolutely wanted me to make them. His mom uses it in her chocolate chip cookies and they are amazing. It keeps them incredibly soft and moist.

1 1/2 sticks (or 3/4 cup) butter
3/4 cup brown sugar
1/4 cup sugar
1 (3.4 oz) package instant vanilla pudding mix, dry
3/4 cup yellow cake mix, dry
2 eggs
1 tsp vanilla
1 tsp baking soda
2-1/4 cups flour
1/2 tsp salt
1/2 cup sprinkles

1. Preheat oven to 350°.

2. In a small bowl stir together flour, salt and baking soda and set aside.

3. In a large bowl, mix the butter and sugars together.

4. Add in the pudding package and cake mix and beat until well blended.

5. Add in the eggs and vanilla and mix until smooth.

6. Add the flour mixture slowly until well incorporated. I added a little at a time, mixed it, added more, mixed it, etc. until the flour mixture was all mixed in.

7. Mix in the sprinkles. Use as many sprinkles as you want! They’re half the fun of funfetti cookies.

8. Roll into 1″ balls and place on greased baking sheet. I made my dough balls a little too big. I suggest keeping it to 1” so they bake quicker and more evenly.

9. Because my dough balls were a little big it took about 20-25 minutes for them to bake.


Everyone really liked the cookies. I would bake these again. They’re quite fun and taste great!
