Saturday was University of Maryland’s homecoming game versus Clemson and a large group of us tailgated for it. In honor of homecoming I prepared several dishes: Reese’s Peanut Butter Chocolate Cookie Bars, Chipotle Lime Shrimp, and Buffalo Chicken Wing Dip. By the time we left, every last bite of each dish had been eaten. (Note to self: Make sure you get to eat a little of the food you brought. I wasn’t by the food table much and when I finally went over all the dip had been eaten and there was one cookie bar left. No complaints though! I’m always happy when there are no leftovers.) A summer staple this year for Matt and I was turkey burgers. Now before you start laughing and cracking jokes about not eating “real” burgers take a moment to read about these. Sometimes I get bored eating regular salads with lettuce so I was thrilled when I came across this Greek Quinoa Salad from So Very Blessed. It’s very similar to the Mediterranean Chickpea Salad I posted a few months ago. Quinoa seems to be the new “it” food and I’ve recently started eating it within the past few months. It’s high in protein and easy to prepare.
Side note- I can’t help but think of the quinoa Bud Light NFL commercial. I’m not much for Bud Light but I just love this commercial. Continue reading
